Bouchon is no one hit wonder here – Thomas Keller has a knack for taking American comfort foods and transforming them into something similar, yet magical. Your morning steak and eggs has turned into a braised kobe short rib with poached eggs, brioche, and homemade hash. The corned beef hash? Made out of prime rib. Let’s not forget about the best coffee in Las Vegas, as well as a top tier pastry and, for the more adventurous types, a proper absinthe setup.

Now onto the main course: a sourdough waffle with bananas, cashews, genuine vermont maple syrup, and tahitian vanilla butter. The waffle itself is perfect – absolutely crunchy on the outside, soft and most on the inside with a gentle give. The cashews provide the perfect textural contrast to the bananas, and the vanilla butter perfectly complements the maple syrup. Taken as a whole, it is one of the best bites in Las Vegas. As a bonus, it’s a mere $9!

Next time you’re in Vegas, try skipping the all you can eat champagne brunch. Instead, drop by Bouchon and try one of the greatest waffles ever.

You understand that this will most likely be the best meal you’ve likely ever had.

Joel Robuchon has done far more than open a massively successful restaurant. He virtually single-handedly has changed the way this little desert town eats for years to come.
